Strawberry Jello Cream Pie


I’d like to think of this pie as a cheat recipe, so simple, especially so when you have all the ingredients at hand, but it’s just too good to posses the derogatory title of “cheat”. It’s so simple because there are such few ingredients, and assembly is uncomplicated. I used a ready to use graham cracker crumb crust, but you can make your own crust too.


1 cup boiling water
1- 3oz package Jell-O Strawberry Flavored Gelatin
1 cup cold water
1-8 oz tub Cool Whip Whipped Topping, thawed
1 ready to use graham cracker crumb crust (6 oz)
Chopped strawberries, to decorate.

In a large bowl, stir the jell-o with the boiling water until dissolved, stirring for about 2 minutes.
Add the cold water, and stir.
Let this mixture cool until it slightly thickens, in an ice bath.
Fold in the cool whip.
Refrigerate for 20 minutes, until the mixture has thickened.
Spoon onto the pie crust.
Refrigerate for 4 hours or until firm.
Decorate with strawberries.
Makes 1 pie.
