Orange Vanilla Cupcakes


This cupcake is a great powerhouse of flavor. The cupcake itself is orange flavoured, and is paired with a creamy vanilla frosting. I decorated it with some white chocolate discs. These cupcakes were for some neighbours, who loved it!

For the cupcake:
1-1/2 cups all purpose flour
1-1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup unsalted butter, softened
2/3 cup granulated sugar
3 large eggs
1/2 teaspoon vanilla extract
Zest of 2 medium oranges
1 tablespoon milk
2 tablespoons orange juice

For the frosting:
2 cups confectioners sugar
1/2 cup unsalted butter, softened
1 teaspoon vanilla extract
2 tablespoons milk or light cream

For the cupcake:
Preheat the oven to 180°C.
Line a muffin pan with 12 muffin cups with liners.
In a bowl, whisk the flour, baking powder and salt.
In a separate bowl, beat the butter and sugar with an electric mixer.
Add the eggs, vanilla extract and zest.
With the mixer running on low speed, add the flour mixture, and beat until combined.
Stir in the milk and orange juice.
Divide the batter evenly into the muffin cups.
Bake for 17-20 minutes, or until a toothpick inserted into the centre comes out clean.
Let the cupcakes cool before frosting.

For the frosting:
With an electric mixer, beat the butter until smooth.
Add the vanilla extract.
Slowly add the confectioners sugar, with the mixer running.
Beat in the milk/cream until of spreadable consistency.
Frost the cooled cupcakes.

Makes 12 cupcakes.
