Gluten free and Eggless Caramel Peach Cake

The cake is so so good. The beautiful marriage of salty caramel and sweet, tangy peaches is brought out by the subtle taste of the vanilla cake. The cake is gluten free and eggless.

Ingredients
For the vanilla cake:
3 cups all purpose flour (I used gluten free)
1 tbsn baking powder
1 tsp baking soda
1/2 tsp salt
1 cup unsalted butter, at room temperature
1 3/4 cup granulated sugar
4 large eggs (I used egg replacer)
2 tsp vanilla extract
1 cup milk, room temperature

For the caramel frosting
3/4 cup unsalted butter, cut into cubes
1 1/2 cup brown sugar
4 1/2 tbsn heavy cream
1 1/2 tsp vanilla extract
2 3/4 cup confectioner’s sugar

Topping:
4 peaches, chopped, or canned peaches

Procedure
For the cake:
Preheat the oven to 180°C.
Line 2 9″ cake pans (round) with parchment paper, or grease.
Whisk the flour, baking powder, baking soda and salt together.
In a separate large bowl, whip the butter using a mixer, until creamy.
Add the sugar, and whip until light and creamy.
Add the vanilla and mix.
Add the eggs, one at a time, mixing in between.
With the mixer on low speed, alternately add the flour (in 3 additions) and the milk (in 2 additions), starting and ending with the flour.
Pour the batter into the two pans, making sure they are even.
Bake for 30 minutes, until a skewer inserted in the middle of the cake comes out clean.
Let it cool.

For the frosting:
In a medium saucepan, melt the butter over medium heat.
Add the brown sugar and bring to a boil, stirring constantly.
Stir in the cream and vanilla, and return to a boil.
Remove from the heat, and let it cool completely.
Once cooled, transfer the mixture to a large bowl and add the confectioner’s sugar.
Using a mixer on high speed, beat until creamy and of spreading consistency.

Assembly:
Place a cake layer on your base, and slather on half of the frosting. Add half of the chopped peaches, and again top with a cake layer. Spread on it the remaining frosting and top with the peaches.

(This is just a guide as to how you may decorate your cake, you could choose to completely frost the cake, including the sides as well, or even stir the peaches right into the batter)
