Oatmeal Chocolate Chip Cookies


I got this from a cookie book “The Ultimate Cookie Book” published by Crestline. These cookies are extremely delicious, and the batter even more so. I think the batter tastes better than the cookies themselves, which are great too. This recipe yields a soft, cakey cookie, which is unlike the typical crunchy cookies you may be used to.

1 1/4 cups packed brown sugar
1 cup unsalted butter, softened
1/2 cup granulated sugar
2 eggs
2 tablespoons milk
2 teaspoons vanilla
1 3/4 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
2 1/2 cups old fashioned oats
1/2 cup chocolate chips (amount depends on your liking)
1 cup chopped nuts (optional)

Heat oven to 190°C.
In a large bowl, beat the butter and sugars together, until light and fluffy.
Add eggs, milk and vanilla, and beat until blended.
Add the flour, baking soda and salt, and beat lightly until a soft dough forms.
Stir in the oats and chocolate chips.
On a cookie sheet lined with parchment paper, drop heaped teaspoonfuls of the cookie dough, 3 cm apart.
Bake for 8-10 minutes, and let cool for few minutes before eating.
